Zone mlin is a modern take on the traditional Balkan dish, made with ingredients that follow the Zone principles. Eggs, low-fat curd cheese, white cheese and oats create a dense, filling texture, while the golden crust gives it that homemade taste that reminds you of grandma's kitchen. Simple in ingredients but rich in flavor, this mlin is a great choice for breakfast, lunch or a light dinner.
Steps to prepare
Put the rolled oats and oat bran in a bowl. Add the egg and yogurt and let the mixture sit for a few minutes so the dry ingredients absorb some of the moisture.
Add the low-fat curd cheese and the white cheese. Season with salt and freshly ground black pepper. Stir well until thick and evenly combined.
Melt the butter in a well-heated pan over medium heat. Pour in the mixture and shape it into one large flat round. Cook until golden on one side, then carefully flip it and cook the other side until done.
Let the mlin rest for a minute or two, then cut it into pieces. Serve warm on its own or with yogurt, a fresh salad or seasonal vegetables.
