Eggs Benedict

Eggs Benedict

Zone eggs Benedict is a lighter take on the classic breakfast, combining eggs, ham and sourdough bread. Creamy eggs and lightly toasted bread create a balanced, filling dish that's perfect for a special breakfast or brunch. You'll find the recipe for the hollandaise sauce that traditionally goes with the eggs below.

Steps to prepare

1. Prep the ingredients

Put a pot of water on the stove and heat it over medium heat. Meanwhile, prepare and measure the bread, ham and butter.

2. Poach the eggs

When the water starts to simmer gently (not a full boil), add a little vinegar. Crack the egg into a small bowl. Create a gentle whirlpool in the water and carefully slide the egg into the center. Cook for about 3 minutes, until the white is set and the yolk is still runny.

3. Toast the bread and ham

Lightly brown the ham in a nonstick pan without any fat. Then toast the bread with the butter until golden.

4. Serve

Layer the bread first, then the ham, and put the poached egg on top. Pour plenty of hollandaise sauce over it (see the recipe below). Garnish with black pepper, flaky salt and sliced green onion tops if you like.
